Chuy’s will open its first Colorado Springs location at 11 a.m. today.
The new Chuy’s occupies a 7,000-square-foot building at 9297 Forest Bluffs View, near the corner of Chapel Hills Drive and Briargate.
The first 50 guests in line on opening day will receive a punch card that includes an appetizer, entrée and dessert, to be used once each month for a year.
Known for made-from-scratch Tex-Mex recipes, the Austin-based chain has three other Colorado locations, all in the Denver area. The Springs restaurant has added 150 full- and part-time jobs.
Founders Mike Young and John Zapp opened the first Chuy’s in 1982 in an abandoned Texas Barbecue restaurant in Austin.
