Jersey Mike’s specializes in Northeast-style fresh sliced and grilled subs. Its second Springs store will open at 1466 Garden of the Gods Road Dec. 17, according to a news release.
Franchise owners Tim and Christy Holliday will host a grand opening event and fundraiser, during which free sandwiches will be available.
“At Jersey Mike’s we are quickly redefining the word fresh,” Tim Holliday said in the release. “We’re doing this by taking every measure to ensure a quality product goes out the door. We do things like cook our roast beef on-site each and every day and freshly slice all our meats and cheeses for each sub sandwich.”
Money raised by the fundraiser between the opening and Dec. 21 will benefit the local Wounded Warrior Project, a nonprofit program serving injured military personnel and their families. Tim Holliday said in the release that the couple’s other two stores have contributed nearly $15,000 to the Wounded Warrior Project since 2013, as well as $10,000 for other schools and nonprofit organizations.
“I work with the WWP because I grew up as the son of an Army combat veteran,” he said in the release. “My dad had visible reactions to loud noises as a result of his service. It was neither discussed, nor diagnosed. Supporting WWP is my way of serving my generation of vets.”
Jersey Mike’s started in Pleasant Point, New Jersey, in 1956 and now has 1,300 restaurants open or in development in the U.S. This is the Hollidays’ third location: They opened their first in Colorado Springs in May 2013 and another in Fountain the following November.
