Tinta de Toro started selling pastries and baked goods from a kiosk in the Plaza of the Rockies building downtown in March.

The location has been good for the little bakery. Company owner Angela Valencia has been impressed with how swiftly her business has grown since she started there.

She works at the kiosk on Mondays, Wednesdays and Fridays, which gives her a day in between to work ahead and prepare some of her baked goods.

“Monday seems like my slowest day,” she said. “I do have a lot of returning customers and I’ve been picking up quite a few private orders for birthday cakes and catering.”

She sold dozens of Easter cookies before the holiday.

Valencia is a trained pastry chef who has worked in the catering industry for eight years. She branched out to open her own catering business in 2011 and has primarily spent the last year teaching private cooking classes.
